Corn Smut Quesadillas

Corn smut, better known as huitlacoche, is a Mexican delicacy with a mushroom-like texture and taste that grows on ears of corn. Although you have probably already heard of it, you might still wonder just how to use it. Well, say no more! Today we’ll prepare some mouth-watering corn smut quesadillas which will do great for a light meal or a tv snack. Are you ready to impress your family and guests?


Ingredients:

(Makes 8 quesadillas)

  • 1 cup of corn smut (which you can buy right here!)

  • 1 ear of corn

  • 1 anaheim pepper

  • 1/2 medium-sized onion

  • 2-3 cloves of garlic

  • 8 fresh corn tortillas

  • 2 cups of shredded oaxaca cheese (you can also use cheddar or monterey jack)

  • Olive oil

  • Salt to taste

Directions:

  • Mince the garlic, chop the onion and stir fry for 2 minutes in a pan to medium heat with a drizzle of olive oil.

  • Cut the anaheim pepper, shuck the corn and remove the kernels. Then add them to the mix and continue frying for 5-7 minutes.

  • In a separate pan, stir fry the corn smut for 5-7 minutes and salt to taste when it’s ready.

  • Put a griddle to medium heat and warm up one corn tortilla for 1 minute. Flip over and add cheese. Be careful! Use a spatula if necessary.

  • As soon as the cheese starts melting, add the previously stir-fried vegetables and fold the tortilla. Repeat for all quesadillas.

  • Top with your favorite salsa.

  • Serve and enjoy!
